I can’t explain just how much I love pumpkin. Muffins, cakes, smoothies, protein shakes, pumpkin seeds, all so yummy.

Pumpkin Spice Cake Recipe
This is something I’ve done with muffins before for the kids, today I did it with cake.
1 Box Spice Cake Mix
15 oz canned pumpkin (not pie filling)
2 eggs
1/4 cup white sugar
Glaze:
1/4 cup icing sugar
1/4 tsp cinnamon
1/4 tsp cloves or nutmeg
Mix and put in greased 9 x 13″ pan, bake 30 minutes at 350 degrees. It’s about 2″ thick and very moist. Put the glaze on warm cake. Makes 16 servings.
